It’s the perfect time of year to enjoy fresh greens from the farmer’s market, and this dressing adds simple flavor to any salad. Plus you can alter the flavor entirely just by changing up the type of vinegar you use. This dressing recipe also makes a great marinade for grilling.
Ingredients
- 1/3 cup olive oil
- 1/4 cup vinegar of choice (see notes below)
- 2 cloves garlic, mashed
- 1 Tsp dijon mustard
- salt and pepper, to taste
Directions
Place ingredients in a jar and shake to combine.
Notes
Changing the vinegar on this recipe will change the flavor of the vinaigrette. A great choice is White Balsamic vinegar. However, for a stronger flavor, use regular Balsamic vinegar. You can also experiment with other kinds of vinegar such as Red Wine vinegar, White Wine vinegar, or even Champagne vinegar.
If you like a slightly sweeter dressing, add a tablespoon of maple syrup or honey.
